Liver comes in approximately 1-1.5 lb. packages and is a very nutrient dense cut. Liver mousse or pate are delicious. Liver can also be chopped fine and added to dishes such as chili or meatloaf to up the nutrient content without as much liver flavor. A 1/2 lb. of liver added to 2 lb. of ground beef or pork is barely noticeable. It's a great way to sneak liver into kids and adults!
